It went through a natural malolatic fermentation to add softness and stability, was aged on the lees for 14 months and bottled unfiltered. This delicious Cabernet was made with grapes from Napa. It is 75% Cabernet Sauvignon and 25% Cabernet Franc. It is richly layered with flavors of spice: vanilla, allspice, and cinnamon, blended with hints of blackberry, boysenberry, violets, mocha and Creme de cassis. The Cabernet Franc adds elegant structure balanced with the Cabernet Sauvignon's coa smooth and lengthy finish. This two year barrel aged wine will continue to age gracefully in the bottle. Our first wine made with almost 50% Colorado grapes! This fruit forward Merlot has some plum and cherry flavors, a soft tannin and a little toasty finish due to the 9 months in new American Oak.
